Hi Everyone,
I'm happy to share with you my Sweetheart's Screaming Stuffed Jalapeno Poppers.
Every year for Super Bowl Sunday my sweetheart makes these goodies and takes them to a party we attend.
Everyone loves them.
First step
Mix cream cheese, chopped garlic, sun-dried tomatoes and a dash of chopped basil and a pinch of salt together until soft and manageable.
The Poppers can be made a couple of different ways.
S prefers to cut the peppers in half.
It would be okay to leave them whole with the seeds removed.
Second step
Remove seeds and put on a foiled cookie sheet.
Third step
Fill the peppers with the mixture. A pastry bag or your choice of tools to fill the peppers.
Final step
Wrap each pepper with a slice or two of bacon and secure the bacon with a toothpick.
S prefers to broil the poppers in the oven. When using the BBQ soak the toothpicks first.
Remove from tin foil and drain on paper towels.
Sweetheart's Screaming Stuffed Jalapeno Poppers
Serves:
10-25 Whole peppers
50 Sliced in half
INGREDIENTS
1 to 2 packages 8oz cream cheese, depending on the size of your peppers, room temperature
2 to 4 cloves chopped garlic or granulated, depending on your preference.
1/4 cup finely chopped sun-dried tomatoes
Chopped fresh basil leaves
Pinch of salt
10-25 jalapeno peppers (larger than average size will make them easier to stuff)
1/2 to 1 pound thinly sliced bacon
Natural wood Toothpicks. Colored toothpicks color the bacon. Doesn't look good.
DIRECTIONS.
Mix packages of cream cheese with chopped garlic, sun-dried tomatoes, and a dash of chopped basil. Add a pinch of salt. Mix until ingredients are soft and manageable.
Slice each jalapeno lengthwise on 1 side if stuffing whole, being careful not to cut the jalapeno in 1/2. If serving half poppers cut completely in half. Remove all seeds.
Fill peppers with either a pastry bag, or your choice of tools. Be careful not to overfill as the filling may spurt out during cooking.
Wrap each pepper with 1 to 2 strips of bacon, securing the opening in the pepper. Secure the bacon with a toothpick (soak the toothpicks first, to prevent burning on the BBQ).
To BBQ: Place tin foil on grate and place peppers on the grill. BBQ the peppers until they are lightly roasted, or until the bacon is fully cooked.
To BROIL: Place tin foil on a cookie sheet and place in the oven under broiler. Cook peppers until lightly roasted and the bacon is crisp and fully cooked.
Easy to prepare in advance, stores well in a cooler until ready to be BBQ'd or BROILED...
