*OMELETTE FROM MONT SAINT- MICHEL*

 Dear Friends and Followers, 
Thank you so much for your kind words of comfort this past week. I know many women have lost their mothers and now I know the pain. I have truly been blessed with a supportive family and wonderful friends
during this time of loss...
But time heals all wounds and blogging has always been a great way to get out of myself and share my joyous life with you all. I'm so grateful today.  
If you are new to my blog.  You will soon discover I love to dream about where I will be traveling on my next trip. I love my home, but I love to travel also.
My new favorite place is France.
And I would love to visit Mont Saint-Michel Abby.  
I have a great French Cookbook with the simplest of the omelettes said to be from Mont-Saint-Michel  for, of course, many variations are part of the area's gastronomic heritage.

I have an herb garden in terra cotta pots just outside my back door. It's a joy to take my scissors and snip off the beautiful parsley, tarragon, and chives to garnish  my freshly cooked omelette.

~Omelette with Cream and Herbs~
From Mont Saint Michel

Preparation and cooking time:15 minutes
6 to 7 eggs, separated
2 tablespoons crème fraîche or whipping cream
Salt to taste
Freshly ground black pepper to taste
1 tablespoon oil 
2 tablespoons butter
1 tablespoons minced fresh herbs (parsley, chervil, tarragon)

Hint: The egg whites should not be stiffly beaten, merely whisked together separately, with a fork.
Take two bowls. In one, put the egg yolks, cream, salt, and pepper.  In the other, combine the egg whites
 Beat the contents of both bowls separately. Heat the oil and 1 tablespoon of the butter in a large skillet.  Pour in the yolks, then the whites.  Cook rapidly 2 to 3 minutes, stirring gently with a fork. Fold the omelette.  Melt the rest of the butter over it before sliding it on to a long platter.  Sprinkle with minced fresh herbs and serve.
ENJOY!
I baked some fresh yeast rolls, and melted butter to add to the delectable breakfast. 
Recipe serves 4 people.

The Omelette of La Mère Poulard
Born in 1852, Annette was twenty years old when Mont Saint-Michel opened its doors to the world after being a prison since the French Revolution of 1789. In 1873 Annette married a baker's son of Mont Saint-Michel, Victor Poulard, who would accompany Annette faithfully and discreetly throughout her life in her two passions: 
Cooking and Mont Saint-Michel  
In 1888 Annette Poulard opened an inn with her husband in the heart of the medieval city to accommodate pilgrims and gourmets of the world. The talent of Annette Poulard and some seven hundred recipes she created during her long career, gave her the honorary title of "Mère" that distinguishes her exceptional cooking and her contribution to the reputation of French gastronomy: This is how the name of La Mère Poulard was born.  Annette was very famous for her delicious omelettes she cooked over a wood fire.
Hence:
The Famous Omelette which visitors to Mont Saint-Michel can still enjoy today.

  1. Beautiful post. Thanks for the recipe. I'll have to try this. I am on a low carb and that looks delicious! Mont St. Michel is a magical little place. One of my favorite spots in France. I hope you make it there someday! It's very difficult to have a bad meal in France. If and when you go let me know!! My husband is French and I have lived a total of 8 years in France. Merci!!

  3. I love omelettes, and this looks so good! I never thought to whip the egg whites, but I can see that your omelette in the picture looks very fluffy, so I will have to give this a try. I hope you get to France--it would be lovely to visit that country some day! I also loved the story at the end of the post as well.
