This is Garage Sale weekend at My Cozy Corner. Trips to England and Scotland are expensive and I decided to help out with the extra expenses by having a garage sale every three months during 2011. I had a sale in February 2011 and now a sale in May and I will have another one in September and November 2011.
After working to get the garage arranged with all the goodies to sell and minding the STORE for 2 days. I was so grateful to have a wonderful and easy dinner/lunch planned for this busy weekend.
Spinach and Bacon Quiche

I love this part. Refrigerated pie crust.
Fresh baby spinach
Crumbled cooked bacon
Wonderful recipe from Paula's Home Cooking/Paula Deen and Friends cookbook/Christmas with Paula Deen book
I love Swiss cheese
Eggs and Cream in the blender
Ready to bake. Prep Time: 15 mins.

Servings: 8 servings
Reheats beautifully in the microwave oven
A Tossed green salad for Two
Fresh Strawberries for Dessert
A Great One Dish Meal
Ingredients
1 9 inch refrigerated pie crust, fitted to a 9 inch glass pie plate
1 1/2 cups shredded Swiss cheese
1 lb cooked bacon crumbled
2 cups chopped fresh baby spinach, packed
Salt and pepper to taste
6 large eggs beaten
1 1/2 cups heavy cream
Directions
Preheat the oven to 375. Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
