Hello Everyone!
I know fall is in air when the fig tree is overloaded with the most delectable Mediterranean food.
The Fig.
The temperature today is hovering around 104. Hot~Hot~Hot~
I made the Fig Comfit this morning and I thought I would take a photo of the Fig Comfit with an Autumn theme under the Pomegranate tree on my little white table...
Oh my gosh! I just opened one of the jars. It is heavenly... Tomorrow night I think I will fry pork chops and use the Fig Comfit as a condiment.
Fig Comfit
1 1/2 Pounds Fresh Figs (washed and stems trimmed)
1/2 Cup Walnuts (roughly chopped)
1 Orange (finely chopped including skin, remove seeds)
1 Tablespoon Honey
1 Tablespoon Lemon Juice
1 Cup Sugar
Cut figs into a rough chop, skins and all. ( Pare off any thick and hard spots.)
In a small pot add figs, orange, honey, lemon juice and sugar. Over medium heat cook contents of pot until fruit breaks down.
( The time this takes depends on how ripe your figs are. The riper the figs, the less time this takes.)
Once you notice that the contents of the pot are beginning to look like preserves, add the chopped walnuts.
Continue stirring and cooking until the mixture reaches the consistency you are looking for. (When you leave the skin on the orange, you will continue to see discernible pieces of fruit. of course, the walnuts will remain intact.) Remove from heat and spoon into jar and seal with hot lid and ring. Set out until lid makes a pop and refrigerate.

I've never had Fig Comfit, but it sounds delish..I love fig preserves, yummy!
