~A Cake for Exhausted Cooks~


Hello everyone, 
Well my life is getting calmer since I have the kitchen mostly put together. Now I can get back to my favorite hobby BLOGGING...
On Monday we had family visiting from out of town and I baked a cake.
 YELLOW JELL-O GLAZE CAKE 
This cake has been a family favorite since I found the recipe in a 1971 Grange Cookbook. 
In the early 70's my kids loved a couple of pieces packed in their lunch box. I think they might have been selling the extra piece for cash, Hum... 



A Cake for Exhausted Cooks.
Simple ingredients and the cake is done in a hour from start to finish.
In the early 70's while the kids were young, ingredients were less expensive. A cake mix, 
fresh lemon juice squeezed from my mother's lemon tree.  Water and oil.
Fresh eggs from our chickens and a package of lemon jell-0.
A cake that is moist and has a delicious flavor. 
So Simple! It's a good thing~
Poking the holes in the cake is easy and adding the lemon glaze is the best!
YELLOW GLAZE CAKE OR LEMON JELL-O CAKE

1 pkg. Yellow cake mix
1 pkg. lemon Jell-o, mix 
mix thoroughly 
Next add:
4 well beaten eggs, 3/4 c. cooking oil, 3/4 c. water
Beat thoroughly.
Bake in greased and floured oblong pan 13x91/2x2  at 350 degrees F. for about 35 minutes.
When baked, and while still in pan, pierce to bottom ten times with fork or ice pick, (while still hot). Pour on glaze which will sink in. 
GLAZE (No Cooking)
2 c.powdered sugar
1/4 c. lemon juice
1/4 c. orange juice or 1/4 c. maraschino cherry juice optional

Yellow Jell-o Glaze Cake tastes so delicious with Triple French Vanilla Ice Cream.

  7. My grandmother gave me this recipe years ago. It is a family favorite. We make it in a tube cake or Bundt pan though. It presents beautifully, I'll have to try it in an oblong pan.
