Visiting Dubrovnik, Croatia


A wonderful place to visit...

I would like to share the second port of call on our anniversary cruise.  Hope you enjoy.

Dubrovnik, Croatia July 28, 2010.


I loved Dubrovnik.  From a scenic view point, we had a magnificent view over Dubrovnik and its Riviera.  We had a pleasant drive along the coastline and through the picturesque villages of the green and fertile Konavle valley.  We headed to Cavtat, with a palm-lined seashore and numerous cafes.  We walked along the beautiful seafront promenade.  At the eastern entrance to the Old Town in Ploce Square we stopped for refreshments and watched a performance that included regional costumes, songs and dances from various Croatian provinces.  After the performance we walked from Ploce Square to Pile Square to finish our beautiful tour, and return to the ship for lunch.

French Roasted Chicken


Hello everyone, 
I've been thinking lately about the wonderful food that is prepared in France. This photo was my inspiration to make French Roasted Chicken. Julia Child has the best recipe in her cookbook Mastering The Art of French Cooking. But, I'm an easy, kinda fast cook. I like lots of free time while something is cooking.  Being retired my sweetheart and I have a wonderful routine for preparing meals. We both love to cook. I cook dinner and he cooks the best breakfast. For lunch we usually snack on leftovers, some cheese, crackers and cold cuts or CHICKEN SALAD.
The French Roasted Chicken was the best Sunday Dinner and all in one pan. After preparing the big bird for roasting I had a few hours to enjoy blogging and resting.

Printable Recipe

French Roasted Chicken
Ingredients:
1 Large Roasting Chicken...
Salt and Pepper 
Butter - The more the better!
Fresh Vegetables for Roasting
1/2 teaspoon dried thyme
2 cups chicken broth
Directions:
  Preheat oven to 425 degrees F.  Wash chicken in cold water and dry thoroughly.
  Season the cavity with salt and black pepper.  Place 3 tablespoons of butter in the cavity
 and rub the outside of the chicken with softened butter all over and season with salt and pepper. 
 Tie or tuck the drumsticks ends together and set the chicken breast side up on an oiled inverted v-shaped rack
 or on an oiled rack in a roasting pan in the oven.  Roast for 15 minutes at 425 degrees F. 
Remove chicken from oven. Reduce heat to 350 degrees F. Baste with pan juices and return to 350 degree F. 
oven for 15 minutes.  Remove from oven and add vegetables, such as carrots, onions, and potatoes, and baste again. 
Roast the chicken until the juices run clear. around 45 minutes, plus 7 minutes per pound. 
 Remove the chicken, cover and let rest while preparing the gravy.
  Make gravy by adding broth and dried thyme on the stove top.
 Stirring constantly. Carve the chicken and serve with roasted seasonal vegetables.

In my All-Clad roasting pan I turned the rack up-side down.
 The vegetables fit under the rack perfectly.  I wanted all the buttery juices to drip down on the root vegetables in the bottom of the pan. 
Carrots, Potatoes, Celery, Onions and Turnips with salt and pepper.

A Look at Venice


Hello everyone, 
A look back to the past. Our first stop on our trip was Venice, Italy. This is the original post.
During my vacation I took photographs to share with everyone.  I thought the perfect way to show photos of each port of call would be to create a mosaic.  SO!!!!!!

Venice is a wonderful place to visit.  St. Mark's Square is amazing.   The heart and soul of Venice, with palatial arcades and charming cafes.  The Byzantine facade of St Mark's Cathedral was originally constructed in the 9th century and the gondoliers are standing around waiting for their next customer. There are many churches in Venice. Visiting the inside of exquisite Doges' Palace, the former residence of the dukes of Venice and the seat of the Venetian government for 800 years was fabulous. Climbing the Golden Staircase to marvel at the paintings of Tintoretto and Veronese and crossing over the Bridge of Sighs to reach the prison and view the cells was like stepping back in time.  As the story is told.  The prisoners would walk through the passages to their cells and would see the beautiful sight of the island of  S. Giorgio and freedom for the last time.

Hope you enjoyed a snippet of the sights in Venice.

Flat Screen Fall Decor


Hi everyone,
I have a question.
Have you ever had a flat screen decorating dilemma?   How to cover up those cords and stuff underneath the television?
Well, I have.
When we first bought our wonderful BIG flat screen television I didn't want to hang it over the fireplace.
I love my mantel and enjoy decorating it as the different seasons roll around.

The solution was to hang the television off the side of the brick fireplace and directly over the entertainment center. 
Pumpkins are the theme with a little bittersweet vine and Indian corn. The basket holds my travel books. I love to buy coffee table books about the country I will be visiting on my next trip.
Right now I'm looking for a book on all the regions of France. 
Orange Sparkler pumpkins with the beautiful long stems. I have plans for those stems in November. Guess what I'm going to make?

~Fall Feathered Fun~


Hello everyone,
Can you say Fall Feathered Fun 3 times real fast? LOL
The first week of October is GONE!
I can't believe September disappeared so fast.  I was trying to put this post together last week,
but life got in the way. I've made a decision regarding decorating our home this fall.
September is golden colors and pumpkins.
October is Creepy and Spooky
November is all about being Thankful. 
My idea is to have the mantel and decor decorated with the same basic decor for the next three months.
Only changing and adding the holiday related decor for October and November.
On December 1st will be Christmas decor galore
This post is about Fall feathers, Fall leaves, Bittersweet berries and pumpkins.
The basics are the Autumn wreath against a golden mirror.
Feathers in the wreath set the theme.
 My son carved the wooden duck in middle school.  Feathers, Autumn acorns, burnish rust colored leaves and feathers in a little french flower container.
The deer sheds and vintage plate accent the color of the wreath.
The antique clock and brass candlestick holders with butterscotch candles with a vintage amber candy dish adds interest to the Fall Feathered Fun on the mantel.
While visiting the Lavender Farm in July I picked up the Petites Fleurs container.
The beautiful vintage dish was in the raffle basket I won in August.
The beautiful cloche sitting on the tea table in my living room reminds me of a Fall forest floor in a jar.  On a bed of green moss are Autumn leaves, wheat, berries, acorns, small pumpkins and gourds, and sparkly glass pumpkins. I have a small forest growing in the living room. 
The sweet ducks add to the Autumn decor. I found the covered duck dish at the thrift store and CMMP France is engraved on the bottom. The other ducks are old time favorites. 
We have collected 'Ducks Unlimited' prints for many years and have the vintage male mallard duck decoy my father brought in the early 1940's sitting on the lower shelf of the tea table.  My mother gifted each grandchild a duck decoy before she passed away. My sister and I each have a male and female mallard duck decoy as a wonderful keepsake.

A Visit to Europe

In the following weeks I'm going to be  sharing my trip to Europe to celebrate my 50th Wedding Anniversary on July 17, 2010.

Wow!!!!  I'm back from the most amazing trip.  I am a California girl.  Born and raised in San Jose, California.  I have traveled some over the past 15 years, but this trip to Europe was a trip of a life time.  Sharing experiences of a trip with family and friends is the most rewarding part of traveling.  I returned to California at 11:35p.m. Saturday night after a flight of 19 hours and 55 minutes.  Leaving Barcelona at 12:00nn on Saturday and flying around the globe was an experience beyond my wildest dreams. The countries I visited were filled with history, art and architecture.
