Our Pomegranate Tree


Signs of Fall
Hello everyone,
The pomegranates are ready to pick.  
My pomegranate tree doesn't grow the dark ruby colored fruit that's sold in the grocery store, but the flavor of the light colored skin and pale colored seeds is just as delicious as the dark ones. The bush was a little sucker from my neighbor's tree and I transplanted it about 35 years ago.  It does a great job of shading the plants underneath on hot summer days and provides me with a delicious treat every fall. 
The tree provides enough fruit for eating, juicing and decorating during the fall season.
I think the pomegranate is the most beautiful and healthy fruit.  When I was young girl,  my sister and I would go to my grandmother's house every summer for a visit and sit under a pomegranate tree with a towel wrapped  around our neck to protect our clothing from getting stained.  We would sit and eat for hours and eat as many pomegranates as we could pick clean.  What a great memory.   I was the champion of eating the most pomegranates and not wasting any seeds.
I think that's the reason I have always had a pomegranate tree.
The strawberries, peony and the lenten rose are shaded by the pomegranate tree.

The pomegranates are picked and ready to squeeze into juice. 
The pomegranate is cut in half and put into the press. Just like squeezing an orange. This juicer can be used to juice many fruits.  

The juice is squeezed into a half gallon jar and then poured into freezer bags and frozen.  I thaw the juice to make pomegranate jelly for hostess gifts or Christmas giveaways to our special friends and family.  Our granddaughters love having a jar of Pomegranate jelly in the fridge for toast and waffles or peanut butter and pomegranate jelly sandwiches...

I'll be busy making some jelly soon. When Thanksgiving dinner is over and the leftovers are packed in containers for distribution to my adult children I always include a jar of delicious pomegranate jelly to go.

Autumn Pumpkin Tea


Happy Monday everyone,
The weather has warmed up again in Northern California. This weekend I wanted to capture the beautiful Autumn colors in my garden, so I decided to set a tea table under the pergola. It's late afternoon and the trees and flowers are in full Autumn glory...

I purchased these pumpkins for their beautiful stems. I have other plans for the stems later, but now I'm having a blast using these little pumpkins in many different ways.
The inspiration for this tablescape or Tea table are the pumpkin napkin rings. I found them a few years ago in the thrift store and they are perfect for this table setting.
The beautiful table cloth is 64" wide and 96" long. I bought this beauty in my favorite thrift shop for $6.00. Amazing...

A Visit to Corfu, Greece



Continuing 50th Wedding Anniversary Trip
We are off to Corfu, Greece this week.  This port of call was on July 29, 2010.  A beautiful Thursday morning.  Off we go.....


We passed through the main part of the town of Corfu and headed out into Corfu's lush and verdant countryside of olive, orange and lemon trees.  Our destination was the village of Gastouri, where we visited the Achillion-the mansion built by the Empress Elisabeth of Austria and later owned by Kaiser Wilhelm II.  Its beautiful gardens and statues have been left intact for visitors to admire.  We continued to Kanoni for a distant view of the convent of Vlacherna and Mouse Island.  We returned to town by a different route and took a walk through the narrow streets of the old district.  We stopped at the beautiful St. Spiridon church before returning to the ship.

Visiting Dubrovnik, Croatia


A wonderful place to visit...

I would like to share the second port of call on our anniversary cruise.  Hope you enjoy.

Dubrovnik, Croatia July 28, 2010.


I loved Dubrovnik.  From a scenic view point, we had a magnificent view over Dubrovnik and its Riviera.  We had a pleasant drive along the coastline and through the picturesque villages of the green and fertile Konavle valley.  We headed to Cavtat, with a palm-lined seashore and numerous cafes.  We walked along the beautiful seafront promenade.  At the eastern entrance to the Old Town in Ploce Square we stopped for refreshments and watched a performance that included regional costumes, songs and dances from various Croatian provinces.  After the performance we walked from Ploce Square to Pile Square to finish our beautiful tour, and return to the ship for lunch.

French Roasted Chicken


Hello everyone, 
I've been thinking lately about the wonderful food that is prepared in France. This photo was my inspiration to make French Roasted Chicken. Julia Child has the best recipe in her cookbook Mastering The Art of French Cooking. But, I'm an easy, kinda fast cook. I like lots of free time while something is cooking.  Being retired my sweetheart and I have a wonderful routine for preparing meals. We both love to cook. I cook dinner and he cooks the best breakfast. For lunch we usually snack on leftovers, some cheese, crackers and cold cuts or CHICKEN SALAD.
The French Roasted Chicken was the best Sunday Dinner and all in one pan. After preparing the big bird for roasting I had a few hours to enjoy blogging and resting.

French Roasted Chicken
Ingredients:
1 Large Roasting Chicken...
Salt and Pepper 
Butter - The more the better!
Fresh Vegetables for Roasting
1/2 teaspoon dried thyme
2 cups chicken broth
Directions:
  Preheat oven to 425 degrees F.  Wash chicken in cold water and dry thoroughly.
  Season the cavity with salt and black pepper.  Place 3 tablespoons of butter in the cavity
 and rub the outside of the chicken with softened butter all over and season with salt and pepper. 
 Tie or tuck the drumsticks ends together and set the chicken breast side up on an oiled inverted v-shaped rack
 or on an oiled rack in a roasting pan in the oven.  Roast for 15 minutes at 425 degrees F. 
Remove chicken from oven. Reduce heat to 350 degrees F. Baste with pan juices and return to 350 degree F. 
oven for 15 minutes.  Remove from oven and add vegetables, such as carrots, onions, and potatoes, and baste again. 
Roast the chicken until the juices run clear. around 45 minutes, plus 7 minutes per pound. 
 Remove the chicken, cover and let rest while preparing the gravy.
  Make gravy by adding broth and dried thyme on the stove top.
 Stirring constantly. Carve the chicken and serve with roasted seasonal vegetables.

In my All-Clad roasting pan I turned the rack up-side down.
 The vegetables fit under the rack perfectly.  I wanted all the buttery juices to drip down on the root vegetables in the bottom of the pan. 
Carrots, Potatoes, Celery, Onions and Turnips with salt and pepper.

A Look at Venice


Hello everyone, 
A look back to the past. Our first stop on our trip was Venice, Italy. This is the original post.
During my vacation I took photographs to share with everyone.  I thought the perfect way to show photos of each port of call would be to create a mosaic.  SO!!!!!!

Venice is a wonderful place to visit.  St. Mark's Square is amazing.   The heart and soul of Venice, with palatial arcades and charming cafes.  The Byzantine facade of St Mark's Cathedral was originally constructed in the 9th century and the gondoliers are standing around waiting for their next customer. There are many churches in Venice. Visiting the inside of exquisite Doges' Palace, the former residence of the dukes of Venice and the seat of the Venetian government for 800 years was fabulous. Climbing the Golden Staircase to marvel at the paintings of Tintoretto and Veronese and crossing over the Bridge of Sighs to reach the prison and view the cells was like stepping back in time.  As the story is told.  The prisoners would walk through the passages to their cells and would see the beautiful sight of the island of  S. Giorgio and freedom for the last time.

Hope you enjoyed a snippet of the sights in Venice.
